'Bamboo Shoot | How to process bamboo shoot | Fermentation | Marie\'s Tribal Kitchen'

'\'\'He yo\'ve bere\'\' (\'what is this?\') as my Aane (mother) would often say in our tribal Galo dialect, Arunachal Pradesh. This is how bamboo shoot culms looks like in its original shape and size although there are different varieties of it. These are edible bamboo sprouts that come out of the ground. Bamboo shoots are consumed in numerous ways in entire North East (NE) India, fresh, dried and fermented. Bamboo shoot is a magic ingredient which can be used as flavouring agent in meat, stews, soups, dry fried, salad and pickles.  NE is rich in diversity and natural resources and one such resource in abundance is bamboo as a way of life and culture and used for almost all purposes for shelter, food, agricultural and fishing implements to fuel for cooking, medicines and even as surgical blades for cutting the umbilical cord of new born babies.   Since long, we have mastered established procedures, skills and traditional knowledge of using bamboo as food and flavoring agent. However, bamboo shoot processing, fermentation, storage for long term usage and preparation have always remained a daily household business for North-easterner\'s which is mostly handled by women. Shoots of some species are suitable for fermentation and whereas shoots of some have good taste as fresh or dried. This video here will perhaps help you understand the difference better.  We harvest quite a large amount of fresh bamboo shoot every season. My sisters loves to make pickles out of it while I personally like to use it as flavouring ingredient in meat dishes as you see in many of my recipe videos.
